2 c Potatoes, cooked
2 c Beef, cooked
1 small Onions
1 t Salt
1⁄4 t Pepper
4 T butter
1 c Brown gravy
or
1 c light cream
1. Put the beef, potatoes, and onion through grinder using the coarse disc.
2. Add seasonings and gravy or cream.
3. Mix well.
4. Melt butter in large skillet and cook hash over low heat about 20 minutes.
5. Variation: red flannel hash grind 1 to 2 cups (250-500 ml) cooked beets or carrots along with potatoes and beef.
6. About 5 minutes before removing from heat.
7. Make 6 depressions in hash with large spoon.
8. Fill each depression with 1 egg. Cover pan and continue cooking about 4 to 5 minutes or until eggs are cooked.
9. Yield: 4-6 servings.
