nitrite nitrate, ph alkalinity and hardness

I got a aquarium test kit trying to sus out my hydro probs.

The color chart shows:
Nitrate
Nitrite
Total Hardness (GH)
Total alakalinity (kh)
(ph - not needed)

What I need to know is:
In hydro water, what ppm's are ideal in these 4 areas? (I know PH already)
How do I adjust/raise or lower these cheaply without harming the plants?

I lived in a place where the ppm's of the tap water was 800.

So, I had to use spring water that tested at 60 ppm's.

What's the ppm's on your water after it sits 24 hours?
