Depends on the variety of plant but usually 1 to 2 weeks from the time you first start noticing a color change. Some plants are longer and take 2-3 weeks longer to mature. Seeds if kept dry are good for many years.

Don`t go by the pistils too much this can be deceptive. You need to get a 30 or more x magnifier to check out the trichomes. When the trichomes turn cloudy the plant is ready.
If you wait longer they will turn amber which means the THC is turning into CBD (I think) which may result in loss of potency but will also mean more of a body high.

There`s little worry of fucking things up by waiting too long, harvesting too early is more of a danger.

Are you growing indoors or outdoors?

Seeds stay good for a long long time if kept under ideal conditions (cool, no light, low humidity). Even under bad conditions they are resilient.

I keep my seeds sealed in a paper envelope filled with uncooked rice in a dark dry cool spot.
