Things named after places

Here in Buffalo, we don't call Buffalo wings "Buffalo wings" we just say just chicken wings or wings... that got me thinking...

do people in Philadelphia call Philly cheese-steaks just cheese steaks?

In Cleveland is it just a "steamer"?

Is it like that where the "host" city omits the location name?
