I'm going with a large Idaho russet, rubbed with olive oil and baked (naked, no foil) in a 375 degree oven. Split and buttered then filled with seasoned ground beef, shredded lettuce and cheddar cheese, topped with sour cream and some chili pepper flakes.

Mmmmmm, good.
