I'm here to say beards do get itchy from time to time, when the weather gets dry. Also food does get in it.

Your skin under your beard is your face and it responds completely different than your scalp.

I think this would be highly uncomfortable.

truth is dude, what was in that video is not a dread. Just some backcombed hair... which will most likely wash out anyway after a few washes. Getting true dreadlocks is a process and a very long journey. You gotta have patience. Good chance the 1st 6months will look like shit, but if you want true dreads gotta at least wait a year
