i am intrigued that us irish didnt come up with potatocakes first. then again, latkes taste great so irish people definitely had no part in the innovation.

Civilization moved west. The Irish didn't have first dibs on it basically, I'd think. But tubers have been a source of food since the begging I'm sure.
