cut them up bite-size, and all about the same size.

if you do like 3-4 decent size ones, microwave the cubed taters for like 3min. [my moms taught me this.. it softens them up a bit, so when you take them to the pan they get nice and crispy on the outside, but nice and soft on the inside..]

rmember to preheat your pan so they potatoes don't sop up all the oil.

if you want to put onions in, don't put them in until your homefries are at least 1/2-3/4 the way done, or they'll all burn. when you do put them in, put them on top of the potatoes and then cover with a lid. walk away for a few minutes. once they've softened and are like transluscent, mix them in with the potatoes and brown them a bit, but don't burn. if you want to put garlic in, put it in whole the same time you put the onions in.

if you have flour and baking powder you could make latkes.

you could also grate instead of chop and make hash browns.

if you grate them though, squeeze out as much of the extra water as you can and pat them dry. don't nuke 'em if you grate.

you don't need a pan lid to use as a lid.. you could use a bigger pan, bigger baking dish, a sheet pan or cookie sheet, tin-foil, etc etc. there are a a ton of different ways to cover a pan..

do it w/o the lid

put a small ammount of oil and the taters in the heated pan and stand there until it looks edible. toss the onions in when its almost done if you want to

i like to slice them instead of cubes
