Melted cheese is usually put on crackers at Mexican restaurants I think. Which explains it's awesomeness.

I always assumed that the heat allows the salt to re-dissolve into the liquid cheese, and it also homogenizes the oil content.

i think the milliard affect has to do with cheese thats already started to get "crispy" or get that golden color.

i think melted cheese tastes better probably becuase of what geeno said and because melted cheese has more surface area than solid cheese so it makes contact more frequently with your taste buds

I think it's texture. Texture can definitely impact how one perceives the taste of something.

Melted cheese tastes different because heat application causes a chemical change in the cheese. Nothing to do with surface area.

Well not really, surface area would only affect how strong the taste was, rather than physically alter the taste. Do you think the difference between cooked/raw eggs is down to variations in surface area?
