If you soak it in salt water overnight in the fidge you can somewhat remove the "wild" taste.

I never did.

you can use it in any beef recipe.

including making sausage.

i just tried to cook it like i would a steak and it came out tough as leather.

also...

Spedi Marinade (from upstate New Yawk)

2-2.5 lbs meat, cubed (can use lamb, pork, beef, must be good quality)
1/2 cup vegetable oil
1/4 cup vinegar
2 tsp worchester sauce
1 tsp meat tenderizer
1/2-1 tsp minced garlic
1/2-1 tsp minced onion
1/2-1 tsp oregano
1/2-1 tsp basil
1 tsp parsley
salt & pepper to taste
(note: all spices are dried)

Mix ingredients and marinate meat at least 24 hrs.
Skewer meat and cook until done, but don't overcook.
or...brown in sauce pan.

Serve in a long bun.

The marinade itself can be kept up to a week in the refrigerator.

if you use fresh pineapple in marinades it will tenderize it more. fresh pineapple has enzymes that break down collagen.

Waiting on some venison stew right now... with red potatoes, green beans, onion, and carrots.. so excited it is almost done Sometimes adding in a mushroom gravy packet for flavoring
I suggest any combination of venison, red potatoes, carrots, celery, lentils, onion, green beans, anythingg deliciouss cooked in a crock pot for 5+ hours, occassionally adding in more liquid. Works every time

Geeno I've only had in ground into like ground beef style. I get a few lbs. of that stuff a yr. from some buddies. I make burgers, chilli, and I've used it for tacos.
