Everyone knows the Maple can be tapped..

Some know the Birch is mixed in with the Maple..

We made a batch of pure Birch Syrup and asked a few to do define the taste in their opinion....some said 'Wildflowers' and some said slightly 'Honeyish'

I prefer the Birch, it's less sweet, it's light and if you're not careful you'll drink the whole thing!

It's easy to see why it was used as a preservative.......

We'll be looking for links to encourage those who would like to try this.
